Vegetables such as turnip tops cooked with traditional orecchiette pasta or cavatelli, or red-yellow peppers filled with meat or rice and baked in the oven. These dishes are available in most of the restaurants in Bari. Along with these specialties, there are other traditional delights and recipes that are based on the farm produce that comes from the province.
Sun-dried tomatoes mollified with olive oil, or sweet olives fried simply in a pan, egg-plants or artichokes in oil. These dishes can all be tried at farmhouses and Masserie (large farms), which are spread throughout the Province.
Anywhere in Puglia, one can find a lot of raw shellfish. This is very common and cannot be avoided. It is one of the strangest kinds of delicacy one can come across in his/her entire lifetime.
